Recipes
Cannelloni with Ham and Ricotta. Serves 4.
Ingredients:
2 tbsp olive oil, 2 onions, chopped, 2 garlic cloves, finely chopped, 1 tbsp shredded fresh basil, 800g canned chopped tomatoes, 1 tbsp tomato puree, 10-12 cannelloni tubes, Butter, for greasing, 225g ricotta cheese, 115g cooked ham, diced, 1 egg, 55g freshly grated pecorino cheese, Salt and pepper to taste.
Directions:
1. Heat the oil in a large frying pan. Add the onions and the garlic and cook for 5 minutes, stirring occasionally.
2. Add the basil, tomatoes, and tomato puree and simmer for 30 minutes. Season with the salt and pepper to taste.
3. Preheat oven to 180°C.
4. Grease a large ovenproof dish with butter.
5. Mix the ricotta, ham and egg together and season with salt and pepper.
6. Using a teaspoon, fill the cannelloni tubes with the ricotta mixture and place in a single layer in the dish.
7. Pour the tomato sauce over the cannelloni and sprinkle with the grated pecorino cheese.
8. Bake in the preheated oven for 35-40 minutes or until golden brown.
Serve immediately.
